OCR: Fried Crab with Chili and Garlic Ingredients: Crab 11/2 lbs (cut into desired size), Ginger 1 tsp(diced), Scallions 2 stalks (cut into 1 inch sections), Egg white 1 (beaten). Sauce Mix: Lee Kum Kee Chili Garlic Sauce 3 tbsp, Catchup 2 tbsp, Hot chili oil 1/2 tsp, Worchestershire Sauce 1 tsp, Salt 1/2 tsp, Sugar 2 tsp. Procedure: 1. Dry the crab with a piece of dry cloth, dust it over with corn starch. Half-cook it in hot oil. Strain and set aside. 2. In the same pan, stir-fry the ginger and the scallions. Add in crab pieces, keep stir-frying for 8 mins. 3. Pour in sauce mix. When it starts to bubble, remove the pan from the heat. Add in egg white and cook till texture is smooth. Serve immediately.
